Secret Ingredient: Cottage Cheese!
Cottage cheese is packed with protein and it's easy to slip into any sauce without anyone noticing. Besides the protein boost, you can make this Mac & Cheese in one pot (+ a blender).
Ingredients:
16 oz container of cottage cheese
12 oz can of evaporated milk (you will only need 2/3)
1 block of good cheddar cheese, grated
4 tbsp of butter
1 box of elbox macaroni
1 tsp of sea salt
Directions:
Bring a large pot of boiling, salted water to a boil. Add the pasta and cook until note quite al dente. The pasta will finish cooking in the sauce.
Meanwhile, in a food processor or blender, add the cottage cheese & 2/3 cup of evaporated milk. Blend on high until smooth.
When the pasta is finished, drain the pasta.
Add cottage cheese sauce and butter to the same pot the macaroni cooked in. Over low heat, warm the mixture.
When sauce is warm, add the pasta and the grated cheddar cheese a handful at a time. Be sure to stir after each addition so the cheese doesn't seize up.
Enjoy immediately or put it in the fridge and warm in the oven at 300 at a later time.
