I used to make guac the old fashioned way by chopping the tomatoes, onions and cilantro; I am a Spanish teacher after all. And then I had kids. To speed it up these days, I use Trader Joe's pico de gallo in place of the chopped up veggies and I can't even taste the difference.
Ingredients:
Trader Joe's pico de gallo (mild)
3 ripe avocados
juice of 1/2 lime
dash of salt
Directions:
Cut the avocados in half and scoop avos into a bowl.
Add 3 large spoonfuls of the pico mixture.
Squeeze in the juice of half a lime and a dash of salt.
Use a knife (sharp or butter) to break up the avocado and stir to combine.
Serve with tortilla chips.
