Sweet Onion Dip Soufflé

A holiday favorite! This is a holiday staple around our house. Whether it's a friends or family gathering....or I guess neither this year? Either way, I'm sure it will make an appearance. I can make this the night before and then bake it right before the event which means it's a win in my book. And it feeds a boatload of people.


Servings: 12 Cook Time: 20 mins baking + 10 mins prep


Ingredients:

  • 1 large sweet onion, chopped

  • 3 (8-ounce) packages of cream cheese, softened(or not, who has that kind of time?)

  • 2 cups freshly grated parmesan cheese

  • 1/2 cup mayonnaise

  • 1/8 teaspoon cayenne pepper, plus more to taste

  • 2 tbsp cup chopped chives, plus more for garnish

  • Kosher salt and freshly ground black pepper


Directions:

Preheat the oven to 425º F. 1. In the bowl of a food processor, process onion until it is pulverized. Add in the cream cheese, parmesan cheese and mayonnaise. Process until completely smooth.

Add the cayenne and and chives. Pulse a few times to combine.


2. Transfer the mixture to a 1-quart baking dish and smooth the top with the back of a spoon. Sprinkle top with salt, pepper and additional chives to look pretty.


3. Bake until browned and puffed, about 20 minutes.


4. Serve warm with crostini or pita chips. Enjoy!



Cooking notes from Julie:

If you don’t have a food processor, you can finely dice the onion and use the mixer to combine everything.
